Directions
- Chop and peel zucchini, chop onion and garlic finely and chop capsicum.
- Fry the above ingredients in canola oil until soft and slightly browned. Add to a saucepan with pasta sauce, and season with salt, pepper, and half a teaspoon of sugar, if desired. Bring to a boil, then simmer for 15 minutes.
- Cook the pasta according to the package instructions.
- Combine fettuccine and zucchini sauce and serve.
