Tasty but simple salad with low fat cottage cheese and balsamic vinegar. Have with low fat meats for a quick and easy meal.
Ingredients
Directions
- Top and tail the beans. Cook until just cooked, keeping them nice and crunchy. Chop the beans in thirds.
- Put chopped beans in a bowl while still hot, add cherry tomatoes, onions, cottage cheese, ground pepper and balsamic vinegar.
- Toss to combine and enjoy.
- Note: this salad goes really well with low fat sliced turkey breast.
