Tomato, vegie sausage and bean stew
Ingredients
- cooking spray oil
- 6 vegetarian sausages, halved
- 1 onion, chopped
- 1 garlic clove, crushed
- 1 teaspoon smoked paprika
- pinch chilli flakes
- pinch sugar
- 600g tomatoes, cut into wedges
- 1 cup reduced-salt vegetable stock
- 2 x 400g tins cannellini beans, drained
- handful chopped fresh parsley

Instructions
1 Spray a large non-stick frying pan with oil and set it over a medium heat. Fry the sausages and onion for 6–8 min until golden.
2 Add the garlic, paprika and chilli flakes and cook for 1 min. Add the sugar and tomatoes and cook for 5 min or until softened. Pour in the vegetable stock and beans and bring to a simmer. Season and stir, then bubble gently for 5 min.
3 Stir most of the parsley through the stew, then divide among 4 serving bowls. Sprinkle with ground black pepper and serve garnished with the remaining parsley.
