There’s more to muesli than simply adding milk.
1. Frozen yoghurt sundaes
Layer fresh or canned fruit, frozen yoghurt and muesli in glasses and freeze for 10 minutes. We like mango and strawberry.
2. Quick muesli ‘porridge’
Need a warm way to start your day? Make quick muesli porridge by heating your favourite muesli and milk for 1-2 minutes in the microwave. Top with sliced banana and 1 teaspoon brown sugar.
3. Top it off
Muesli tastes great sprinkled over reduced-fat ice cream.
4. Easy Bircher
For homemade Bircher muesli soak 1 cup untoasted muesli in 1/2 cup apple juice overnight. In the morning, mix in your favourite low-fat yoghurt and serve with added fruit.
5. Biscuit break
Here’s a good way to add fibre to your morning tea: enjoy homemade muesli bikkies. Mix 3 cups muesli with 1/2 cup flour, 50g melted reduced-fat spread, 1/4 cup apple purée, 1 beaten egg and 1/3 cup liquid honey. Shape dough into biscuits and bake at 170°C for 10 minutes.
6. Lunchtime delight
Need some nibbles for your child’s lunchbox? Mix together 1/2 cup toasted muesli with a sprinkling of sultanas, chocolate chips and peanuts for a tasty trail mix they will love.
7. Crisp crumble
Muesli is a great crumble topping. Place your fruit of choice into a lightly-greased baking tray (try sliced apples, pears or stone fruit), sprinkle muesli on top and bake until the fruit is cooked through.
8. Quick and healthy pud
Make a pretty parfait: layer muesli with low-fat yoghurt and diced fruit. A super-fast and delicious weeknight dessert.
9. Muesli muffins
Preheat oven to 180°C.Combine 1 1/2 cups self-raising flour with 1 1/2 cups muesli, 1/2 cup brown sugar, 2 cups diced apples and 1/2 cup diced dates. Make a well in the centre and stir in 1 cup trim milk, 1 egg and 50g melted reduced-fat spread. Spoon into a lightly greased 12-hole muffin tray. Bake for 15-20 minutes. (800kJ per muffin).
10. Boost for muffins
Give your regular muffin recipe a nutrition boost by adding muesli – replace half the flour amount with your favourite muesli. This is especially nice in fruity muffins such as banana or berry.
