Berry boba ‘tea’
Ingredients
- ½ cup tapioca flour
- 1 tablespoon cocoa powder
- ¼ cup boiling water
- 2 cups skim milk
- 1 cup strawberries, fresh or frozen plus extra, to garnish
- 1 teaspoon honey
- 4 ice cubes

Instructions
1 In a bowl, place tapioca flour and cocoa powder. Slowly add boiling water while mixing until a dough forms. Using your hands, divide dough into 4 pieces and roll each piece into a long, thin snake. Chop into very small pieces then roll into small pearls.
2 Bring a large pot of water to the boil. Add tapioca pearls (boba) and cook for approximately 5 minutes, until they all float to the surface, then strain and run under cold water.
3 Meanwhile, in a blender, place milk, berries, honey and ice and blitz until smooth and creamy.
4 Divide the boba between two tall glasses, pour over berry milk and stir to mix.
5 Garnish with sliced strawberries and serve.
Variations
Make it low FODMAP: Swap the milk for lactose-free milk and replace the honey with maple syrup.
Make it gluten free: Check cocoa is gluten free.
Make it vegan: Replace the milk with soy milk or any other plant milk, and the honey with maple syrup.
HFG tip
You can buy tapioca pearls from Asian supermarkets but it’s fun making your own boba for your tea, and the texture is much nicer!
