Orange and (sshhhh!) cauliflower loaf
Ingredients
- 2 oranges
- ½ head cauliflower, chopped into small florets
- ½ cup almond meal
- 1 tablespoon mixed spice
- ½ cup maple syrup
- 2 eggs
- ¼ cup vegetable oil
- 1 teaspoon vanilla paste or extract
- 1½ cups wholemeal flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup low-fat plain yoghurt, to serve

Instructions
1 Preheat oven to 180° fan-forced and line a 6-cup capacity loaf tin with baking paper.
2 Place oranges in a small pot and just cover with water. Bring to the boil, then reduce heat and simmer for 15 minutes. Remove from water, set aside to cool.
3 Place all ingredients, including intact boiled orange (but not the yoghurt), in a food processor and blitz until combined. Do not overmix.
4 Transfer mix to the lined loaf tin and bake for 35–40 minutes, or until a skewer comes out clean when inserted.
5 Allow to cool slightly before turning out onto a rack or serving plate. Serve warm or cold with a dollop of yoghurt.
