Ham and pasta salad with lemon-mustard dressing
Ingredients
- 250g pasta
- 1 tablespoon olive or canola oil
- 150g sliced lean ham, cut in narrow strips
- 2-3 stalks celery, sliced
- 2 medium tomatoes, sliced
- ½ small red onion, diced
- 1-2 tablespoons chopped fresh chives or parsley, to garnish
- Lemon-mustard dressing
- ¼ cup reduced-fat mayonnaise
- ¼ cup low-fat plain yoghurt
- 1 lemon, finely grated zest
- ¼ cup lemon juice
- 2 tablespoons olive or canola oil
- 1 tablespoon whole grain mustard
- salt and black pepper, to taste

Instructions
1 Cook pasta following packet directions until al dente. Once cooked, drain and continue rinsing with cold water until pasta is cool. Return to saucepan and add the first measure of oil. Toss gently.
2 To make dressing, in a large bowl whisk the first 6 dressing ingredients then season to taste.
3 Add cooled pasta, ham and prepared vegetables to dressing and stir gently to combine. Garnish with chopped herbs and serve immediately or store in the fridge until required (salad can be prepared several hours in advance if desired).
