Beef noodles with creamy peanut sauce
Ingredients
- 2 tablespoons light olive oil
- 1 red onion, sliced
- 1 red capsicum, sliced
- 1 green capsicum, sliced
- 3 cloves garlic, sliced
- 500g extra lean beef strips
- 300g vermicelli rice noodles
- roasted peanuts, chopped, to serve
- spring onion, chopped, to serve
- Creamy peanut sauce
- 1 tablespoon maple syrup
- 2 tablespoons reduced-salt gluten-free soy sauce
- ¹⁄³ cup no-added-salt-or-sugar peanut butter

Instructions
1 In a large frypan, heat the oil over medium-high heat. Cook onion and capsicum for 5 minutes, or until slightly golden. Add the garlic and cook for a further 2 minutes.
2 Add the beef strips to the pan and cook for a further 3 minutes, until the meat is browned.
3 Cover the noodles with hot water and sit for 10 minutes, or until cooked. Drain well.
4 Whisk peanut sauce ingredients with ¹⁄³ cup water in a bowl until smooth.Pour over beef mixture along with the cooked noodles. Stir well and serve with peanuts and spring onion.
